My mom has always made a delicious "oven porcupine" dish that pairs with a rice and cheese casserole. About a month ago, Matt and I were over for dinner and she had made these two dishes...they instantly became favorites for Matt! Sooo, I attempted both tonight and I gotta say, not bad for a first time! Aaaand, added bonus? SUPER easy! Trust me, at times I have the attention span of a two-year-old in the kitchen, and tonight was one of those nights! But the prep time on these is short, and there aren't very many ingredients. Here are both recipes, enjoy!!
"Oven Porcupines" (Meatballs)
1 pound ground beef
1/2 cup uncooked rice
1/2 cup water
1/3 cup chopped onion (I find onion powder also works)
1 tsp salt
1/2 tsp celery salt
1/8 tsp garlic powder
1/8 tsp pepper
1 can (15 oz) tomato soup
1 cup water
2 tsp Worcestershire sauce
Heat oven to 350. Mix meat, rice, 1/2 cup water, onion, salts, garlic powder and pepper in a bowl. Shape mixture into balls. Place meatballs in ungreased baking dish (8x8).
Stir together remaining ingredients; pour over meatballs.
Cover with aluminum foil; bake for 45 minutes. Uncover and bake for another 20-25 minutes.
Serve and enjoy!
Notes: Mixing the beef and spices works best with your hands. It's messy, but it works!
Rice and Cheese Casserole
2 1/2 cups of water
1 envelope Lipton Chicken Noodle Soup Mix
1 cup uncooked rice
1 can cream of chicken soup
1 cup sharp cheddar cheese, shredded
2/3 cup evaporated milk/ regular milk
Preheat oven to 350.
Combine water, soup mix, and rice in a saucepan. Bring to a boil, cover tightly, and simmer for 20 minutes.
In a greased 9x9 baking dish combine the rice mixture, soup, cheese, and milk. Mix lightly.
Sprinkle top with freshly group pepper or paprika and parmesan cheese.
Bake in oven for 25-30 minutes. Serve and enjoy!
